GREEN BEANS HELLENIKA 
2 lbs. green beans
1 onion
3 tomatoes or 1/4 c. tomato paste
1/2 bunch parsley
1/4 c. oil
1 tsp. salt
Dash of pepper
Stock or water

Cut beans into bite-size pieces. Chop onion, tomatoes, and parsley. Put all the ingredients into a heavy pot, cover and cook until tender, at least 20 minutes. Add only as much stock or water as necessary to keep from sticking. Stir frequently. Serve 4 to 6.
