MEXICAN CHICKEN CASSEROLE 
Preheat oven to 375 degrees.

3 c. boiled, bite-sized pieces of chicken

Boil chicken in salted water, debone and cut into bite-sized pieces. Keep broth.

1 lg. bag Doritos (cheese flavored), crushed
1 lg. bag grated cheese (choose favorite kind of cheese)

SAUCE:

1 can cream of mushroom soup
1 can cream of chicken soup
1 can diced Rotel tomatoes
1 can chicken broth (from boiled chicken)

Line a buttered two-quart baking dish with 1/2 of the chicken. Cover with 1/2 of the crushed Doritos and add 1/2 of the sauce on top of the Doritos. Sprinkle 1/2 of the cheese on top of everything. Repeat procedure with the remaining ingredients in the same order, adding the cheese last. Place casserole into preheated 375 degree oven for 35 to 40 minutes, until fully heated.
