BLUE CHEESE LEMON DRESSING 
1/4 lb. blue cheese
3/4 c. salad oil
1 tsp. grated lemon peel
1/4 c. fresh lemon juice
1 c. sour cream
Minced garlic to taste
1 tsp. salt

Mash cheese with fork or mix with electric mixer. Blend in oil, beating until smooth. Stir in grated lemon peel, lemon juice, sour cream, minced garlic and salt, mixing well. Makes about 2 cups dressing.
