KENTUCKY HIGH DAY PIE 
2 eggs
1 c. sugar
1/2 c. melted butter
3 tbsp. bourbon (optional)
1/4 c. cornstarch
1 c. chopped pecans
6 oz. pkg. chocolate chips
1 unbaked 9" pie shell

In mixing bowl, beat together eggs, sugar, melted butter and bourbon. Blend in the cornstarch and add chopped pecans and chocolate chips. Pour into pie shell and bake at 350 degrees for 45 to 50 minutes. Cool for 1 hour before serving. Delicious if served warm and even better with ice cream or whipped topping.
