OLD FRENCH-STYLE POTATOES 
2 lbs. boiling potatoes
1 med. yellow onion, peeled and chopped
2 tbsp. flour
4 tbsp. olive oil
2 tbsp. parsley, chopped
Salt and pepper to taste
Grated rind and juice of 1 lemon

Peel and cut potatoes into quarters. Parboil in salted boiling water for 3 minutes; drain. Mix all remaining ingredients except for lemon juice in a large bowl. Place in a buttered baking dish and drizzle a little more oil on top if you wish.

Bake in 450 degree oven for 20-25 minutes or until nicely browned. Pour lemon over the top just before serving. Keep dish very hot until you serve it. Serves 6-8.
