You can make one snack cookie sandwich using the ingredients given here - or you can make them by the dozen on short notice.

1 tsp. peanut butter
2 flat unfilled cookies (lg. butter cookies, chocolate chip, etc.)
4 or 5 miniature marshmallows
6-8 semi-sweet chocolate pieces

Spread a thin layer of peanut butter on bottom side of a flat cookie. Top with marshmallows and chocolate pieces. Broil until marshmallows are puffy and chocolate pieces appear melted. Top with another cookie, bottom side down. Makes 1 cookie sandwich.
