WHOOPIE PIES 
6 tbsp. vegetable shortening
1 c. sugar
2 1/4 c. flour
1/4 tsp. salt
1 tsp. vanilla
1 egg
1/2 c. cocoa
1/2 c. buttermilk
1 tsp. baking soda dissolved in 1/2 c. water

CREAM FILLING:

3/4 c. vegetable shortening
2 1/2 to 3 c. confectioners' sugar
1 egg white
1 tsp. vanilla

COOKIES: Cream shortening. Add sugar. Beat in egg. Add dry ingredients alternately with buttermilk and vanilla. Beat in baking soda-water solution. Mixture will be thick. Drop by rounded teaspoon about 1 1/2 inches apart. If not teflon sheet should be greased well. Bake at 400 degrees for 8 to 10 minutes.

CREAM FILLING: Beat shortening and 1 cup confectioners' sugar until fluffy. Beat in egg white and vanilla. Beat in enough remaining confectioners' sugar to make good spreading consistency. Sandwich cookies together with thick layer of cream filling. Makes 2 dozen.

BUTTERMILK: 1 1/2 teaspoons vinegar or lemon juice in milk. Let stand 5 minutes. Makes good substitute if no buttermilk.
