CLASSIC CITRUS SALAD 
DRESSING:

1 tbsp. rice vinegar
1/4 tsp. Dijon mustard
1/4 tsp. sugar
Dash salt and pepper
1/2 tsp. olive oil

In small bowl whisk together dressing ingredients.

SALAD:

2 c. fresh spinach leaves, washed, dried and chilled
1 sm. orange, peeled and segmented
2 tbsp. finely sliced red onion
3 walnut halves, chopped

Arrange salad ingredients in serving bowl - pour dressing over salad and toss. Yield: 1 serving - 1 fat - 1 fruit - 2 vegetables - 156 calories.
