MICROWAVE NACHOS 
1/4 c. each diced tomato and green bell pepper
Dash hot sauce
2 tostado shells
2 oz. rinsed drained canned pink beans, mashed
1 oz. cheddar cheese, shredded
1 tbsp. plus 1 tsp. sour cream

In small mixing bowl combine tomato, pepper and hot sauce. Arrange each tostada on 6 inch paper plate. Spread 1 ounce of the beans on each tostada; top with half of the vegetable mixture and then with 1/2 ounce cheese. Microwave on medium high (70%) for 1 minute; rotate plates 1/2 turn and microwave on medium high for 45 seconds, until cheese is melted. Let stand for 30 seconds to cool slightly. Cut each tostada into 4 equal wedges and top each wedge with 1/2 teaspoon sour cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
