PISTACHIO PUDDING CAKE 
1 pkg. (4-serving size) Pistachio instant pudding
1 yellow cake mix
1/2 tsp. almond extract
4 eggs
1 1/4 c. water
1/4 c. oil
7 drops green food coloring (optional)

Combine all ingredients in large mixing bowl. Blend and then beat at medium speed for 2 minutes.

Pour into greased 10 in. tube or bundt pan.

Bake at 350°F for 50-55 minutes. Sprinkle powdered sugar on top.
