MUSHROOM AND ONION PIE 
Prepared pie crust for 10-inch pie
2 oz. grated cheddar
8 oz. grated Swiss cheese
2 tbsp. flour
2 lg. sliced onions
4 tbsp. butter
1 tsp. tarragon
1/2 lb. mushrooms, sliced
2 lg. eggs
3/4 c. heavy cream

Toss cheeses with flour. Melt butter in frying pan and gently saute sliced onions in butter until golden (1/2 hour). Spread 1/2 of cheese over bottom of pie, then onions. In the remaining butter saute mushrooms, then arrange over onions. Sprinkle with tarragon and cover with the remaining cheese. Bet eggs with the cream and pour it over the cheese. If you like nutmeg, sprinkle a little on top. Bake in preheated oven 350 degrees about 35-40 minutes until the top browns nicely.
