SWEET POTATO SPOON BREAD 
4-5 sweet potatoes, grated
Rind of 1 lemon
Rind of 1/2 orange
4 eggs, beaten
1 1/2 c. honey
3/4 c. oil
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Mix first 3 ingredients well. Beat the eggs until frothy. Continue beating adding honey in a fine stream. Add oil slowly beating until smooth. Add grated mixture to egg mixture. Add nutmeg and cinnamon; mix well. Pour into oiled baking dish. Bake at 325 degrees for 1 hour. Serve hot or cold with ham or chicken.
