SWEET POTATO BREAD 
2 c. self-rising flour
1/2 tsp. baking soda
1 tsp. cinnamon
1 stick butter, melted
1 c. cooked mashed sweet potatoes
1/3 c. orange juice
1/2 c. milk
1 egg, beaten
1 c. chopped dates
1/2 c. chopped nuts

Preheat oven to 375°F. In a bowl, combine the butter, sweet potatoes, milk, orange juice and egg. Mix well. Sift the dry ingredients together and stir them into the sweet potato mixture. Fold in the dates and nuts, mixing well.

Bake in a greased 8 x 8-inch pan for 30 to 40 minutes.

Serves 6 to 8.
