SPICY OVEN FRIED CHICKEN 
1/2 c. Quaker cornmeal
1/2 c. flour
1 1/2 tsp. salt
1 1/2 tsp. chili powder
1/4 tsp. pepper
1/2 tsp. oregano
2 to 3 lb. fryer, cut up
1/2 c. milk
1/3 c. melted butter

Combine cornmeal, flour, salt, chili powder, oregano and pepper. Dip chicken in milk then coat with cornmeal mixture. Place pieces of chicken, skin side up, in large shallow baking dish; drizzle with butter and bake at 375 degrees for 50 to 55 minutes.
