RICOTTA COOKIES 
1 c. butter
2 c. sugar
3 eggs
4 c. flour
1 tsp. baking soda
1 lb. Ricotta, drained
Pinch salt

Cream butter and sugar until light. Add slightly beaten eggs. Mix well. Sift flour with baking soda and salt. Add flour and Ricotta alternately to butter mixture. Drop 1 tablespoon of dough on greased cookie sheet. 350 degrees, 10 to 12 minutes.

FROSTING:

2 c. powdered sugar
1 tsp. milk
1 tsp. vanilla
Red food color
