SQUASH CROQUETTES 
1 c. fine bread crumbs
2 lbs. yellow squash
1 grated onion
2 eggs
2 tsp. salt
1 tsp. pepper
1 c. cornmeal
Hot oil or shortening for cooking

Cook squash until tender, drain and mash. Add remaining ingredients except oil and cornmeal. Add more bread crumbs if mixture is too soft and moist. Shape mixture into balls, roll in cornmeal, deep fry until golden brown.
