2 c. white wine
1/2 c. chopped onion
1 clove garlic
1 tsp. dill seed
2 stalks celery
2 bay leaves
1 slice orange
1 cinnamon stick
3 cloves
3 drops Tabasco
Water to cover meat

Put meat in large pot, cover with water and add all ingredients. Bring to boil and simmer until tender.
