ARTICHOKE FRITTATA 
4 eggs, slightly beaten
6 saltine crackers, crushed
1/4 lb. grated cheddar cheese
Half of a green pepper, chopped
3 green onions with tops, sliced
2 (6 oz.) jars marinated artichoke hearts, drained and chopped
Chopped parsley
Dash of Tabasco sauce
Salt and pepper to taste

Saute pepper and onions in small amount of oil from marinated artichokes. Let cool slightly. Mix all ingredients and bake at 325 degrees for 25 to 30 minutes in 8 inch square pan.
