BANANA MUFFINS 
3 lg. bananas, soft
3/4 c. sugar
1 egg
1/3 c. butter, melted
1 tsp. baking powder
1/2 tsp. salt
1 1/2 c. flour
1/2 to 1 c. pecans, chopped
1 tsp. baking soda

Mash bananas in bowl. Add sugar and slightly beaten egg. Add melted butter, add dry ingredients. Stir until well mixed. Add nuts. Fill lined muffin tins about 2/3 full. Bake at 375 degrees for 20 minutes. Makes 12 muffins.
