PAN FRIED GREEN TOMATOES 
1/2 c. all purpose flour
1/4 c. white corn meal
1 tsp. salt
1/4 c. peanut oil
3 tbsp. butter
Sugar
Pepper

Combine flour, cornmeal and salt. Wash and core the tomatoes. Slice about 1/4" thick, discarding end pieces. Coat each slice with flour and cornmeal mixture. Heat oil with butter over medium heat. Fry the prepared slices in the hot oil, use a spatula carefully to turn each slice. When brown on both sides, sprinkle very lightly with sugar and pepper; serve immediately.
