PAN-FRIED GREEN TOMATOES | |
1/2 c. all-purpose flour 1/2 tsp. salt 1/4 tsp. pepper 2 lg. green tomatoes, cut into 1/2 inch slices 1/4 c. butter 2 tbsp. brown sugar Combine flour, salt, and pepper; stir well. Dredge tomato slices in flour mixture. Melt butter in a large skillet. Fry tomato slices on one side until browned. Remove from skillet, and place in a 13 x 9 x 2 inch baking pan, browned side down. Top each tomato slice with 1 teaspoon brown sugar. Broil 3 inches from heat 5 minutes or until browned and bubbly. |
