TROPICAL SALAD 
1 (8 oz.) can crushed pineapple, undrained
1 red apple, unpeeled and chopped
1/4 c. flaked coconut
1/4 c. thinly sliced celery
1/4 c. chopped macadamia nuts or toasted pecans
3 tbsp. chopped dried papaya
1/3 c. mayonnaise
1 green apple, unpeeled and sliced
1 red apple, unpeeled and sliced
Lettuce leaves

Drain pineapple, reserving juice; set juice aside. Combine pineapple and next 6 ingredients; stir well. Cover and chill.

Combine green and red apple slices and reserved pineapple juice, tossing to coat. Arrange apple slices and pineapple mixture on lettuce leaves.

Serves 6.
