WIENER SCHNITZEL 
2 lb. veal steak, 1/2 inch thick & cut into serving portions
1 egg, beaten
Dash of salt
1 1/2 c. bread crumbs
1 tbsp. lemon juice
1/8 tsp. BLAIR black pepper
1 tbsp. BLAIR all-purpose seasoning
1/8 tsp. BLAIR paprika

Season cutlets with salt and pepper. Dip pieces in bread crumbs, then into beaten egg and again in the crumbs. Let stand in refrigerator 15 minutes before cooking. Brown in hot fat on both sides, cover and simmer for 30 minutes. Sprinkle with lemon juice, all purpose seasoning and paprika.
