WIENER SCHNITZEL 
2 lb. veal steak, 1/2 inch thick
Lemon juice
Salt and pepper
2 eggs, beaten
4 tbsp. cold milk
4 tbsp. flour
Fine dry bread crumbs
Oil for frying

Cut the veal into serving pieces and marinate the veal in about 4 tablespoons lemon juice for at least 1 hour at room temperature. Dip the veal into seasoned flour, then into beaten eggs with the milk and then coat with bread crumbs.

Fry in the oil until a golden brown. Some grated cheese can be added to the bread crumbs to add flavor. Serves 4.
