WIENER SCHNITZEL 
2 lbs. veal steak, 1/2 inch thick
Lemon juice
Salt & pepper
2 eggs, beaten
4 tbsp. cold milk
4 tbsp. flour
Fine dry bread crumbs
Oil for frying

Cut the veal into serving pieces and marinate in 4 tablespoons lemon juice for at least 1 hour at room temperature. Dip the veal into seasoned flour, then into beaten eggs with the milk and then coat with bread crumbs. Fry in oil until golden brown. Some grated cheese can be added to bread crumbs to add flavor. Serves 4.
