MINESTRONE SOUP 
1/2 of a 1 lb. pkg. Bob Evans bulk sausage
1 clove garlic, crushed
1 can Contadina tomato paste
1 c. water
1 (16 oz.) can kidney beans
2 to 3 potatoes, peeled & cut into chunks
1 zucchini, chopped coarsely
2 stalks celery, chopped coarsely
1 green pepper, chopped
1/2 head cabbage, chopped (optional)
1 to 2 carrots, peeled & chopped
8 to 10 c. water
6 to 10 peppercorns
1 tsp. parsley, chopped
1 sprig fresh basil or 1/2 tsp. basil flakes
1/2 tsp. thyme
Sm. bits of pasta (optional)

In a large pot, brown sausage and garlic until brown. Drain off the fat and add the tomato paste and 1 cup of water. Cook for 5 minutes. Add the remaining ingredients and bring the mixture to a boil. Allow the soup to simmer for 2 to 3 hours. Correct the seasoning before serving.
