MINESTRONE WITH TORTELLINI 
1 1/2 lb. bulk Italian sausage
1 c. chopped onions
6 c. beef broth
1/2 c. dry red wine
1 (16 oz.) canned tomatoes
2 c. carrots, sliced
1 c. celery, diced
1 c. tomato catsup
1 tsp. Italian seasoning
2 cloves garlic, minced
2 c. zucchini, sliced
1/2 lb. tortellini
1 med. pepper, diced
1/4 c. chopped parsley
Salt and pepper
Grated Parmesan cheese to top

Brown sausage and drain fat. Add onions and saute until tender. Add beef broth, wine, tomatoes, carrots, celery, catsup, Italian seasoning and garlic. Bring to boil, simmer 30 minutes. Drain fat. Stir in zucchini, tortellini, green pepper and parsley. Simmer 30 to 40 minutes or until tortellini is tender.
