TREE'S CALICO BEANS | |
1 lb. Polska kielbasa (or Polish sausage) 1 (12 oz.) can of your favorite beer (optional) 1 medium onion, thinly sliced 2 tbsp. olive oil 1 clove garlic, minced 1 (28 oz.) can Bush's baked beans (any flavor) 1 (15 oz.) can chili beans in sauce, unrinsed 3 (15 oz. ea) cans, any combination you like of: black beans, great northern beans, red beans, pinto beans, pink beans, cannelloni beans, butter beans or kidney beans (you get the idea), rinsed in cold water (the first 3 are my favorite) 1/4 cup brown sugar 1/4 cup ketchup (Hunts) 1 tbsp. prepared mustard 1 tsp. Worcestershire sauce Tabasco sauce, to taste ground black pepper, to taste 4 strips raw bacon, diced Soak Kielbasa or sausage in beer overnight, discard beer, cut into 1-inch pieces (You CAN skip this step if you want, I just know it's a big hit with the beer crowd). In a large sauté pan, over medium high heat, sauté oil and onion and cook 'til translucent, Add garlic and sausage. Sauté until all is lightly browned, set aside. In a large lightly greased baking dish, Gently combine beans, and remaining ingredients except bacon. Gently stir in sausage mixture. Sprinkle top evenly with the raw bacon. Cover and bake in 350°F oven for 30 minutes. Remove cover and bake 15 minutes more. Place under broiler for additional 5 minutes. Keep an eye on it so as not to burn! Note: Sprinkle top with a little brown sugar for sweeter beans. Use less sugar if you like your beans less sweet. Sliced franks can be substituted for sausage. Submitted by: Trecia |
