SWEET POTATO BALLS 
3 c. mashed sweet potatoes
1/4 c. butter
3/4 c. brown sugar
2 tbsp. milk
1/4 tsp. salt
1/2 tsp. grated lemon rind
8 marshmallows
1/2 c. crushed corn flakes

Combine mashed potatoes, butter, sugar, milk, salt and lemon rind. With tablespoon scoop out about 1/4 cup. Place marshmallow in center and mold into center with additional potato while shaping into balls. Roll in corn flakes. Place in buttered baking dish. Bake at 350 degrees for about 20 minutes or until marshmallow melts. Serves 8. To freeze: Cover with foil and freeze until needed.
