SWEET POTATO BALLS 
1 1/2 c. cooked mashed sweet potatoes
2 1/3 c. milk
1/2 tsp. salt
1 tsp. grated lemon rind
4 marshmallows
1 egg, well beaten
1/8 tsp. black pepper
1 c. corn flakes
3 tbsp. butter, melted

Mix sweet potatoes, butter, milk, black pepper, sugar and lemon rind. Form into four balls with marshmallows in the center of each. Roll in egg mixture and then in corn flakes. Bake in shallow dish at 400 degrees for 20 minutes. Serves 4.
