SUMMER SAUSAGE 
5 lbs. ground beef
4 or 5 tsp. Morton's Quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. coarse ground black pepper
2 1/2 tsp. garlic salt
1 tsp. hickory smoke salt

(4 days.) Mix well, cover and refrigerate. Take out once a day, mix well with your hands for three days. The fourth day mix and form into 5 loaves and lay on broiler pan. Bake at 175 degrees for 8 hours.
