HUMMINGBIRD CAKE 
3 c. plain flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. vanilla
1 tsp. cinnamon
1 1/2 c. vegetable oil
3 eggs
1 (8 oz.) can crushed pineapple
2 c. chopped nuts
2 c. chopped bananas

Sift dry ingredients; stir in eggs and oil. Add all other ingredients; stir until mixed. Do not beat.

Pour into greased and floured tube or bundt pan. Bake at 350 degrees for 1 hour and 10 minutes. Cool in pan.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1 stick butter
1 (16 oz.) box confectioners sugar

Have butter and cream cheese at room temperature. Mix all ingredients together; beat or stir until smooth. Spread on cake.
