PISTACHIO HONEY CAKE 
3 c. all-purpose flour
3/4 c. sugar
1 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1/2 c. oil
1/2 c. honey
1 oz. (1 sq.) semi-sweet chocolate, melted
1/4 tsp. ground nutmeg
3/4 c. strong black coffee
1 lg. orange, unpeeled & cut in 1 inch chunks
1/2 c. coarsely chopped pistachios

Generously grease 11 x 14 x 2 inch baking dish. Preheat oven to 375 degrees. In large bowl, combine flour, sugar, baking soda and baking powder. Make a well in center and add eggs, oil, honey, chocolate and nutmeg. Stir to mix well. Place coffee and orange in blender or food processor and process until orange is finely chopped. Stir into cake mixture and pour into prepared dish. Sprinkle pistachios over top and bake in preheated oven for 35 minutes or until firm when pressed lightly in center. Cool and cut into squares. Makes 24 to 30 pieces.

NOTE: This cake improves with a few days' keeping in the refrigerator.
