BANANA BREAD 
1/2 c. Wesson oil (buttery flavor)
1 1/2 c. sugar
2 eggs, well beaten
1/4 tsp. salt
1 1/2 c. sifted flour
1 tsp. baking soda
1/3 c. buttermilk or sour cream
1 tsp. lemon extract
1 tsp. vanilla extract
3 very ripe bananas, mashed
1 c. walnuts or pecans, chopped

Cream oil and sugar; add eggs and salt and mix well. Add flour and soda combined with buttermilk. Add bananas. Fold in nuts. Grease 2 regular size loaf pans; pour in mixture and bake approximately 45 minutes at 325 to 350 degrees. When bread leaves sides of pan and toothpick comes out clean, bread is done. This recipe can be doubled.
