TEXAS CHILE 
1 tbsp. vegetable oil
1 med. onion chopped (1/2 c.)
1 tsp. minced garlic
2 lb. lean ground beef
3 tbsp. chile powder or to taste
1 tsp. ground cumin
1 tsp. oregano leaves (ground)
1/2 tsp. salt
2 cans (16 oz.) tomatoes undrained
2 cans (16 oz.) red kidney beans

Heat oil in 4 quart Dutch oven over medium heat, add onion and garlic, cook until tender, brown meat in pot and cook until brown. Add remaining ingredients and cook until slightly thickened and flavor develops.
