GOURMET POTATOES 
6 lg. potatoes
1/2 c. butter
2 c. grated sharp cheddar cheese
1 1/2 c. sour cream (or sour half and half)
1 tsp. salt
Dash of pepper
1/3 c. onion, chopped fine

Cook potatoes. Mash together with the other ingredients. Place in 2 quart casserole. Bake at 350 degrees for 1/2 hour. Or, make ahead, cover and refrigerate overnight. Remove 1 hour before baking. Bake 45 minutes. Makes 8 to 10 servings. Leftovers are great! Paprika may be sprinkled on the top. Variations of the above may be to add 1/4 teaspoon curry powder, or 3 drops Tabasco sauce.
