GOURMET POTATOES 
6 med. potatoes, boiled and shredded
1 c. grated cheddar cheese
1/4 c. butter
1 1/2 c. sour cream, room temperature
1/2 c. chopped green onions
1 tsp. salt
2 tbsp. butter

Combine cheese and butter in saucepan until almost melted; remove from heat. Stir in sour cream, onions, salt, and shredded potatoes. Pour into well oiled casserole; dot with butter and bake at 350 degrees for approximately 1/2 hours.

This may be made ahead of time and taken out and popped into the oven just long enough to heat through.
