CORN FRITTERS 
1 egg
1/4 c. milk
1 c. pancake mix
12 oz. can whole kernel corn, drained
Vegetable oil

Blend egg and milk, then add pancake mix. Gently fold in corn. Drop by teaspoonful into oil that's been heated. Cook until golden brown. Serve as vegetable or with maple syrup. Makes 18 corn fritters.
