3 sm. zucchini, washed & sliced in 1/4" coins 1 sm. peeled & cubed eggplant, 1/2" cubes 1 sm. onion, chopped med. fine 1 (8 oz.) pkg. sliced mushrooms 1 tbsp. olive oil 1 lb. or whatever the small size jar Ragu spaghetti sauce Parmesan cheese 1/2 tsp. garlic powder or fresh minced garlic Salt & pepper to taste Combine onion, zucchini, eggplant and olive oil in a large pot. Over low heat simmer tightly covered for 30 minutes. Add spices to taste. Combine with mushrooms and spaghetti sauce and heat over low heat until bubbly. Serve with Parmesan cheese. |
