EGG PASTA | |
2 1/3 c. all purpose flour 1/2 tsp. salt 2 beaten eggs 1/3 c. water 1 tsp. olive oil or cooking oil In large mixing bowl stir together 2 cups of flour and salt. Make a well in center of the mixture. In a small mixing bowl combine eggs, water and olive oil or cooking oil. Add to flour mixture and mix well. Sprinkle kneading surfaces with remaining flour. Turn dough out onto floured surface. Knead until dough is smooth and elastic, 8-10 minutes. Cover and let rest 10 minutes. Divide dough into thirds. Roll each third of dough into a 1/16 inch thick rectangle about 16 x 12 inches. Cut as desired. Makes 1 pound fresh pasta. |
