GRITS SOUFFLE 
2 c. milk
1/2 c. instant grits
1 tsp. salt
1/2 tsp. baking powder
2 tbsp. butter, melted
1/2 tsp. sugar
3 eggs, separated

Preheat oven to 375 degrees. Grease a 1 1/2 quart casserole or 1 1/2 quart souffle dish.

Scald the milk, add the grits and cook until thick, stirring constantly.

Add the salt, baking powder, butter and sugar; mix well. Beat the egg yolks and add to the grits. Beat the egg whites until they hold soft peaks; fold in. Pour into the prepared dish. Bake at 375 degrees for 30 minutes. Serve hot.

NOTE: Just before folding in the egg whites, 1/2 cup grated sharp cheese and a dash of Tabasco sauce can be added to make an excellent variation of the above recipe.
