BLUEBERRY PEACH CRUMB CAKE | |
2 c. fresh peaches 1 c. fresh blueberries 2 tbsp. cornstarch 1/2 c. sugar 1/4 tsp. ground nutmeg 1 c. cinnamon graham cracker crumbs 2 tbsp. butter, melted Layer peaches and blueberries in the bottom of an 8-inch square baking dish. Combine cornstarch, sugar and nutmeg; sprinkle over the fruit. Combine graham crackers and butter, mixing well. Sprinkle mixture over fruit. Cook, using the appropriate settings. Note: Unsweetened frozen blueberries and peaches, thawed, may be substituted for fresh blueberries and peaches. If cinnamon graham crackers cannot be found, you may substitute 1 cup graham cracker crumbs and mix in 1/2 teaspoon of ground cinnamon. Microwave on half power for 5 minutes. |
