GURKENSALAT (CUCUMBER SALAD) 
1 lg. cucumber
1/2 tsp. salt
1 tbsp. sugar
1 tbsp. cider vinegar
1 tbsp. minced parsley
1/4 c. sour cream

Peel cucumber leaving some green rind. Slice paper thin. Sprinkle slices with salt, sugar and vinegar. Marinate. Then drain off liquid that has accumulated; toss with sour cream and sprinkle with parsley. Serves 4.
