PHILIPPINE CHICKEN FOR TWO 
Chicken pieces, skinned (for 2 servings)
3 tbsp. cider vinegar
3 tbsp. light soy sauce
Lg. clove garlic (whole or chopped)
1/8 tsp. pepper

Arrange chicken in a single layer in skillet. Mix other ingredients; pour over chicken. Cover tightly; simmer gently until chicken is tender (about 40 minutes). Turn chicken several times. If desired, heat fresh or canned bean sprouts in sauce and serve over rice.
