BEEF CASSEROLE 
1 lb. lean ground round
1/2 c. diced celery
1 tbsp. instant minced onion
1 can (28 oz.) whole tomatoes and liquid
1/2 c. uncooked long grain rice
1 tsp. chili powder
1/4 tsp. pepper
1 can (4 oz.) mushroom pieces and liquid

Place a plastic colander in a large glass mixing bowl. Crumble ground round into small pieces and cover with waxed paper. Microwave on HIGH for 5 minutes or until meat is no longer pink, stirring after 2 1/2 minutes.

In a 3 quart casserole combine all ingredients. Microwave covered on HIGH setting for 10 minutes, stirring halfway through cooking time. Stir well. Reduce power level to MEDIUM (50% power) and microwave covered for 10 more minutes or until all liquid is absorbed. (This was from the Coronary Heart Disease Research.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
