BEEFY CABBAGE CASSEROLE 
1 lb. lean ground beef
1 sm. onion, chopped
1/3 c. uncooked long grain rice
1 1/4 tsp. parsley flakes
1/4 tsp. pepper
1/8 tsp. garlic powder
1 sm. head cabbage, chopped (about 6 c.)
2 c. vegetable juice cocktail or tomato juice

Crumble ground beef into 2-quart microwave-safe casserole. Add onion. Microwave (high), uncovered, 5 to 6 minutes or until meat is set, stirring once. Drain. Mix in rice, salt, parsley, pepper, garlic powder and cabbage. Pour vegetables juice over all. Cover with casserole lid.

Microwave (high) 9 to 10 minutes or until boiling, stirring once. Then microwave low (30%) 13 to 15 minutes or until rice is tender, stirring once. By using full power, microwave 20 minutes, stirring twice. Let stand, covered, 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
