BEEFY CABBAGE CASSEROLE | |
1 lb. lean ground beef 1 sm. onion, chopped 1/3 c. uncooked long grain rice 1 1/4 tsp. parsley flakes 1/4 tsp. pepper 1/8 tsp. garlic powder 1 sm. head cabbage, chopped (about 6 c.) 2 c. vegetable juice cocktail or tomato juice Crumble ground beef into 2-quart microwave-safe casserole. Add onion. Microwave (high), uncovered, 5 to 6 minutes or until meat is set, stirring once. Drain. Mix in rice, salt, parsley, pepper, garlic powder and cabbage. Pour vegetables juice over all. Cover with casserole lid. Microwave (high) 9 to 10 minutes or until boiling, stirring once. Then microwave low (30%) 13 to 15 minutes or until rice is tender, stirring once. By using full power, microwave 20 minutes, stirring twice. Let stand, covered, 10 minutes. |
