CORN MUFFINS 
2 c. corn meal
2 c. flour
1/2 c. sugar
8 tsp. baking powder
1 tsp. salt
2 eggs
2 c. milk
1/2 c. shortening

Mix all ingredients together. Beat vigorously for 30 seconds. Pour batter into lined or greased muffin tins. Bake in 425 degree oven until golden brown, about 20 minutes.
