SWEET CORN MUFFINS 
1 c. all-purpose flour
1/2 c. yellow cornmeal
1/2 c. sugar
1/2 c. butter, melted
2 tsp. baking powder
1/2 tsp. salt
2 eggs
1/2 c. milk
1/2 tsp. corn syrup

Mix first 6 ingredients. Combine eggs, milk, and syrup separately. Mix the flour mixture and the milk mixture together. Grease muffin tins and fill each cup 1/2 full of batter. Bake 9 to 12 minutes or until brown at 450 degrees.

Made these to go along with our beef stew tonight and my husband and two year old LOVED them! I followed the exact recipe, only change I made was after taking muffins out of the oven I brushed the tops of them with a mixture of melted butter and sugar.
