MEXICAN LASAGNA 
1 lb. ground turkey or beef, browned
1 c. tomato sauce
2 c. picante sauce
1 pkg. taco seasoning (I like Schilling)
1/2 c. onion

Simmer for 10 minutes. In separate container, mix:

1 c. cottage cheese
3 eggs
1 tsp. oregano
1/2 tsp. garlic salt

Also need:

8 sm. corn tortillas
7 oz. Monterey Jack
4 oz. Cheddar

Spray 9x13 inch pan. Layer half of meat, half of tortillas, half of cottage cheese mixture, half of the hard cheese. Repeat. Bake at 350 degrees for 25 minutes. 8 servings of 4 proteins, 1/2 vegetables, 1 bread.
