MEXICAN LASAGNA 
3/4 lb. ground beef
1 tbsp. chopped onion (or more)
1/2 tsp. garlic powder
1 pkg. taco seasoning mix (1 1/4 oz. pkg.)
2 (8 oz.) cans tomato sauce
1 c. cottage cheese
1 c. sour cream
1 sm. can sliced black olives
1 (4 oz.) can chopped green chilies
8 oz. sharp cheddar cheese, shredded
1 (7 oz.) pkg. tortilla chips

Saute ground beef. Drain. Add onions, taco seasoning mix and tomato sauce and simmer 5 minutes. Set aside. In large bowl, mix cottage cheese, sour cream, chilies and olives. Set aside. In deep 2 quart casserole, layer 1/3 tortilla chips, 1/2 meat sauce, 1/2 cheddar cheese, 1/2 cottage cheese mix. Repeat layers cover with remaining 1/3 chips.

NOTE: To simplify the recipe, you can combine meat mixture and cheese mixture after meat had been cooked, then proceed layering with tortilla chips. Bake uncovered at 350 degrees for 35 to 40 minutes.
